How to use

Hot tea: steep 1–2 teaspoons in 250ml boiling water for 5–10 minutes, strain and sweeten to taste.
Iced tea: steep 2 tablespoons in 1 litre of boiling water for 15 minutes, strain, chill and serve over ice with lemon and mint.
Cold brew: soak 2 tablespoons in 1 litre of cold water overnight in the fridge for a smoother cup.
Sorrel & zobo: simmer with ginger, cloves and cinnamon, sweeten generously and chill.
Also used for cordials, syrups, jams, and as a natural pink-to-ruby colour in icings and cocktails.

Good to know

Hibiscus tea is not made from the ornamental garden hibiscus. It comes from Hibiscus sabdariffa (roselle), and specifically from the calyx — the fleshy red cup that forms around the seed pod. That is what gives the drink its colour and its sharp, cranberry-like tartness. Most cheap hibiscus is cut-and-sifted, which brews fast but cloudy; whole calyces take a few minutes longer and give a clearer cup that strains out properly. The same flower is known as sorrel in the Caribbean, zobo and bissap in West Africa, karkade in Egypt and agua de Jamaica in Mexico. It is naturally tart, so most people sweeten it — honey, sugar and stevia all work, and ginger, cinnamon, cloves, mint and citrus are the classic partners.

Storage

Store in a cool, dry place away from direct sunlight. Once opened, transfer to an airtight container or clip the pack closed and keep it dry.
